Energy balls

INGREDIENTS

  • 3 tbsp almond butter
  • 11 tbsp unsweetened almond milk
  • 10 drops vanilla stevia
  • 3 tablespoons coconut oil
  • 4 dates
  • 125g almonds (preferably pre-soaked and dried)
  • 1 tbsp cocoa powder
  • 1 tsp maca powder
  • 1 tsp superfood powder
  • 2 scoops Sunwarrior classic chocolate protein powder
  • 2 tbsp coconut flour
  • 6 tbsp shredded coconut
  • 1 tbsp cocoa nibs
  • 1 tbsp cinnamon
  • 2 tsp matcha powder
  • 1 tbsp chia seeds

SERVES: MAKES 18 BALLS

COOKING: NO COOKING REQUIRED

TOTAL: 20 MINUTES

DIFFICULTY: RELATIVELY EASY

METHOD

Grind the almonds. 

Add the unsweetened almond milk, vanilla stevia, coconut oil and almond butter to a blender cup/jug.  

Add all the dry ingredients except four tablespoons shredded coconut.

Blend until smooth but you may need to use a spoon to encourage the mixture to mix well.  

Add the mixture to a bowl and make sure its well mixed.

Use a 15cm measured spoon to portion and make into small balls.

Add the four tablespoons of shredded coconut to a bowl and roll each ball in the coconut to coat it.

Place the balls on a tray lined with wax paper and allow to firm up in the fridge for an hour.

Wrap in wax paper for transportation.

Storage:  Energy balls keep well in the fridge for up to two weeks.
