Apricot and Pumpkin Seed Energy Balls

INGREDIENTS

250g dried apricots

160g pumpkin seeds

2 tbsp almond butter

1 tbsp coconut oil

60ml unsweetened almond milk

1 tbsp hot water

3 cardamon seeds

DIFFICULTY: EASY

METHOD

Steep the cardamon in the hot water for 5 minutes.

Using a flat blade of a blender or a Magimix, blend the pumpkin seeds until they turn into a coarse flour.

Discard the cardamon seeds and add the water and the rest of the ingredients to the blender and blend until smooth.

Roll into small balls and allow it to set in the fridge overnight.

Enjoy as a snack or as a healthy dessert.

These balls keep well in the fridge for up to 2 weeks.
